This Sweetener is a Natural Sugar
Natural sugars are found naturally in foods such as fruit (fructose) and milk (lactose) and some vegetables. Fiber syrup is made from soluble tapioca fiber which comes from the cassava root.
It’s a Isomolto-oligosaccharide
Isomalto-oligosaccharide (IMO), is a mixture of short-chain carbohydrates. IMO is found naturally in some foods, as well as being manufactured commercially. Tapioca fiber is in the form of a soluble prebiotic fiber IMO.
Inside and Out
It has a mildly sweet, clean flavor. IMO is resistant to digestion. In turn, it becomes a food source, prebiotic, for the beneficial bacteria in your gut. It is not metabolized, so it does not raise blood sugar or insulin levels.
Put it to Good Use
Tapioca syrup is roughly 60% as sweet as table sugar. It may be sweet enough without adding other sweeteners. Great for cookies, bars, waffles, dips, drinks and baked goods.
