1 1/2 lbs (680g) grass-fed ground beef or chicken
2 tbsp (30ml) avocado oil
2 tsp (4g) chili powder
1 tsp (2g) ground cumin
1 tsp (2g) paprika
1/2 tsp (0.5g) dried oregano
1/2 tsp (1.5g) garlic powder
1 tsp (6g) sea salt
1/2 tsp (1g) black pepper

Taco Assembly:
12 corn tortillas or cassava tortillas
1 cup (90g) cabbage, shredded
1/2 cup (80g) red onion, diced
1/2 cup (30g) fresh cilantro, chopped
2 limes, cut into wedges
1 large avocado (150g), sliced
Salsa and hot sauce for serving

Steps

Heat:

Heat avocado oil in large skillet over medium-high heat until oil shimmers and is hot but not smoking.

Brown:

Add ground meat to hot skillet and cook, breaking up with wooden spoon or spatula, until meat is browned and mostly cooked through.

Season:

In small bowl, mix together chili powder, cumin, paprika, oregano, garlic powder, salt, and pepper until well combined.

Spice:

Add spice mixture to cooked meat and stir well to coat evenly. Cook 2-3 more minutes until spices are fragrant and well incorporated.

Warm:

Heat tortillas in dry skillet over medium heat for 30 seconds per side, or hold directly over gas flame using tongs until lightly charred.

Assemble:

Fill warm tortillas with seasoned meat and desired toppings – cabbage, onion, cilantro, and avocado slices work beautifully together.

Serve:

Serve immediately with lime wedges for squeezing, salsa, and hot sauce on the side. Enjoy while tortillas are still warm for best texture.
