The Unhappy Hour

[The Warm Welcome Remix]

Warm bourbon meets fresh apple cider in a short glass, a strip of orange peel curling over the rim and a cinnamon stick standing guard. Not sweet, not fussy — just the drink that tells a fall evening it’s allowed to begin.

Ingredients

8 oz (240ml) bourbon
24 oz (720ml) fresh apple cider
4 strips orange peel
8 dashes Angostura bitters
4 cinnamon sticks, for garnish

Steps

Warm:

Heat the apple cider in a small saucepan over medium-low heat until steaming but not boiling, 4-5 minutes. Do not let it simmer hard — you want it warm, not reduced.

Build:

Pour 2 oz (60ml) bourbon into each of 4 short glasses. Top each with 6 oz (180ml) of the warm cider and 2 dashes of bitters.

Finish:

Express an orange peel strip over each glass to release the oils, drop it in, and rest a cinnamon stick on the rim.

Serve:

Serve immediately, already waiting on the table when your guests sit down.

Make it Good For The Gut

Swap in raw apple cider vinegar, 1 tsp (5ml) per glass, for a tangy digestive boost that plays surprisingly well against the bourbon’s warmth. Fresh grated ginger steeped in the cider while it warms adds anti-inflammatory bite and helps settle a full stomach after a heavy fall meal.

Remix Options

Zero-Proof: Skip the bourbon and double the cider to 12 oz (360ml) per glass; the bitters still carry the depth. Rye Swap: Replace bourbon with rye whiskey for a spicier, drier pour. Spiced Up: Add a clove-studded orange peel and a star anise pod to the warming cider for a deeper spice profile. Iced Version: For an early-fall day, skip the warming step and build over ice instead. Sweetened Pour: Stir in 1 tsp (5ml) raw honey per glass while the cider is still warm if your crowd likes it sweeter.

Good To Know

Cider Selection: Use fresh, unfiltered apple cider rather than clarified apple juice — the cloudiness carries more body and a rounder flavor that holds up against the bourbon. Bitters: Angostura is the classic call here, but an orange or baraspice bitters would also fit the profile if you have one on hand. Make-Ahead: The cider can be warmed in a slow cooker on low up to 2 hours ahead and held there for a hands-off serving setup during a gathering. Storage: Leftover warmed cider keeps in the refrigerator for up to 5 days — reheat gently before rebuilding the drink. Troubleshooting: If the cider tastes flat, it’s usually under-warmed; bring it back to steaming (not boiling) to wake the aromatics back up before pouring.
