Ingredients

For Drink:
2 oz (60ml) pear juice or pear nectar
4 oz (120ml) sparkling apple cider, chilled
1/2 oz (15ml) fresh lemon juice
1/4 tsp (1ml) vanilla bean paste or pure vanilla extract
1 sprig fresh rosemary
Ice

For Bruleed Pear Garnish:
1 thin pear slice (about 1/8 inch thick)
1 tsp (4g) allulose

Steps

Brulee Pear:

Slice pear very thin (about 1/8 inch). Pat completely dry with paper towel. Sprinkle allulose evenly on one side. Use kitchen torch to caramelize until golden and crispy. Set aside on parchment paper.

Muddle:

Gently muddle fresh rosemary sprig in bottom of cocktail shaker or glass 2-3 times to release oils – don’t overdo it or flavor becomes bitter. Optional: Add sugared rim by running lemon wedge around glass rim and dipping in allulose.

Mix:

Fill glass with ice. Add pear juice, fresh lemon juice, and vanilla bean paste. Stir well to distribute vanilla throughout drink.

Top:
