Ingredients

1 cup (90g) rolled oats (certified gluten-free)
1/2 cup (120g) natural peanut butter (or almond butter)
1/2 cup (120g) date paste (or 10-12 medjool dates, pitted and blended)
2 tablespoons (30ml) pure maple syrup (optional, for extra sweetness)
1/4 cup (40g) cacao nibs
2 tablespoons (14g) ground flaxseed
1 teaspoon vanilla extract
1/4 teaspoon sea salt
Optional add-ins: shredded coconut, chia seeds, hemp hearts

Steps

Mix:

In a large bowl, combine rolled oats, peanut butter, date paste, maple syrup if using, cacao nibs, ground flaxseed, vanilla extract, and salt. Mix with a spatula or your hands until everything is evenly distributed and the mixture holds together when squeezed. If too dry, add water 1 teaspoon at a time. If too wet, add more oats.

Roll:

Scoop about 1 tablespoon of mixture and roll between your palms into a tight ball. Place on a parchment-lined plate or container. Repeat with remaining mixture to make about 16 balls. Press firmly when rolling—the tighter the ball, the better they hold together.

Chill:

Refrigerate for at least 30 minutes to firm up. The balls will hold together better and taste better cold. They’re ready when they’re firm enough to grab without falling apart.
