Ingredients

Pastry Base:
1 sheet frozen puff pastry, thawed (look for all-butter—Dufour is a great option)
2 tbsp (30g) grass-fed butter, melted

Cinnamon Sugar Filling:
1/3 cup (65g) coconut sugar
2 tsp (4g) ground cinnamon
1/4 tsp (1g) ground cardamom
Pinch of sea salt

Orange Glaze:
1 cup (120g) powdered allulose
2-3 tbsp (30-45ml) fresh orange juice
1 tsp (5ml) orange zest
1/2 tsp (2ml) vanilla extract

Steps

Prep:

Preheat oven to 400F (200C). Line baking sheet with parchment paper. Thaw puff pastry according to package directions until pliable but still cold.

Mix:

In small bowl, combine coconut sugar, cinnamon, cardamom, and sea salt. Stir until evenly blended.

Roll:

On lightly floured surface, roll puff pastry into 12×10 inch rectangle. Brush entire surface with melted butter.

Sprinkle:

Evenly distribute cinnamon sugar mixture over buttered pastry, leaving 1/2 inch border along one long edge.

Roll:

Starting from long edge without border, tightly roll pastry into log. Pinch seam to seal. Refrigerate 15 minutes to firm up.

Slice:

Using sharp knife, cut log into 8 equal pieces. Place cut-side up on prepared baking sheet, spacing 2 inches apart.

Bake:

Bake 20-25 minutes until golden brown and puffed. Cool on baking sheet 5 minutes while preparing glaze.

Glaze:

Whisk together powdered allulose, orange juice, zest, and vanilla until smooth. Drizzle over warm buns and serve immediately.
