Kale Chips
Kale Chips
[The Crispy Green Comeback Remix]
Light, crispy, and impossibly addictive. Fresh kale leaves massaged with olive oil and sea salt, baked low and slow until they shatter at the touch. This is the chip that made kale cool again—crunchy, salty, and gone in minutes.
Ingredients
1 large bunch curly kale (about 8 ounces/225g)
1 1/2 tablespoons (22ml) extra virgin olive oil
1/2 teaspoon flaky sea salt
Optional seasonings: garlic powder, smoked paprika, nutritional yeast, cayenne pepper
Steps
Prep Kale:
Preheat oven to 300°F (150°C). Wash kale and dry completely—moisture is the enemy of crispy chips. Remove thick center stems and tear leaves into 2-3 inch pieces. The leaves will shrink significantly as they bake.
Massage:
In a large bowl, drizzle kale with olive oil. Using your hands, massage the oil into every leaf for 2-3 minutes until the kale darkens slightly and feels tender. This step is crucial—it tenderizes the kale and ensures even coating.
Season:
Sprinkle with flaky sea salt and any optional seasonings. Toss to distribute evenly.
Bake:
Arrange kale in a single layer on two large baking sheets—don’t overlap or they’ll steam instead of crisp. Bake for 12-15 minutes until edges are crispy but centers are still slightly tender. Watch closely in the final minutes—they go from perfect to burnt quickly.
Cool & Serve:
Let chips cool on the baking sheets for 5 minutes to crisp up further. Serve immediately for maximum crunch.
Make it Good For The Gut
Kale provides prebiotic fiber: Feeds beneficial gut bacteria and supports digestive health. Olive oil reduces inflammation: Polyphenols in extra virgin olive oil support gut lining health and reduce intestinal inflammation. Nutrient density supports microbiome: Vitamins A, C, and K in kale provide nutrients that beneficial bacteria thrive on.
Remix Options

Good To Know
Your Swaps Executed: This recipe swaps store-bought chips for homemade kale (way more nutrients, no seed oils) and vegetable oil for extra virgin olive oil (anti-inflammatory, rich flavor). The green comeback is REAL. Dry is Essential: Even a little moisture will make chips soggy instead of crispy. Use a salad spinner or pat completely dry with paper towels. This is the most important step. Low and Slow: The 300°F temperature seems low but it’s perfect—higher heat burns the edges before the centers crisp. Patience creates perfect chips. Massage Matters: Those 2-3 minutes of massaging break down the tough cell walls in kale, making it tender and ensuring the oil coats every surface. Don’t skip this step. Single Layer is Critical: Overlapping chips steam instead of crisp. Use two baking sheets if needed. Space equals crispiness. Timing is Tight: Kale chips go from perfect to burnt in 60 seconds. Watch them closely in the final minutes and pull them when edges are crispy but centers still have a tiny bit of give. Storage Reality: These are best eaten immediately. They lose crispiness within hours even in airtight containers. Make only what you’ll eat now.
