Ingredients

2 large ripe avocados, pitted and scooped
1/3 cup (30g) unsweetened cocoa powder
1/4 cup (60ml) pure maple syrup
1/4 cup (60ml) unsweetened almond milk
2 teaspoons vanilla extract
1/4 teaspoon sea salt
2 ounces (60g) dark chocolate (70% cacao or higher), melted and slightly cooled
Optional toppings: fresh berries, coconut whipped cream, cacao nibs, flaky sea salt

Steps

Blend:

Add avocados, cocoa powder, maple syrup, almond milk, vanilla extract, and salt to a high-powered blender or food processor. Blend on high for 1-2 minutes, stopping to scrape down the sides, until completely smooth with no lumps or avocado chunks visible. The mixture should be silky and glossy.

Add Chocolate:

With the blender running on low, drizzle in the melted dark chocolate. Blend for another 30 seconds until fully incorporated. The melted chocolate adds depth and richness that takes this from good to extraordinary.

Chill:

Divide mousse among four serving glasses or ramekins. Cover and refrigerate for at least 1 hour to allow the mousse to set and the flavors to meld. The texture firms up as it chills, becoming more mousse-like and less pudding-like.

Serve:

Top with fresh berries, coconut whipped cream, cacao nibs, or a sprinkle of flaky sea salt. Serve chilled and watch people try to guess the secret ingredient.

Make it Good For The Gut

Avocados provide prebiotic fiber: Each serving delivers fiber that feeds beneficial gut bacteria and supports digestive health. Dark chocolate contains polyphenols: These compounds support beneficial bacteria growth and reduce inflammation in the gut. Add probiotic topping: Serve with coconut yogurt instead of coconut whipped cream for billions of beneficial bacteria.

Remix Options

Mint Chocolate: Add 1/4 teaspoon peppermint extract for after-dinner mint flavor. Mocha Version: Add 1 tablespoon instant espresso powder for coffee depth. Orange Chocolate: Add 1 teaspoon orange zest and replace vanilla with orange extract. Peanut Butter Chocolate: Blend in 2 tablespoons natural peanut butter for nutty richness. Spiced Mexican: Add 1/2 teaspoon cinnamon and a pinch of cayenne pepper for warmth. Lower Sugar: Reduce maple syrup to 2 tablespoons or replace with allulose for even lower glycemic impact. Coconut Cream Version: Replace almond milk with full-fat coconut cream for extra richness.

Good To Know

Your Swaps Executed: This recipe swaps heavy cream for ripe avocados (healthy fats, creamy texture, no dairy) and white sugar for pure maple syrup (natural sweetener with minerals, deeper flavor). The avocado creates silky mousse texture without the dairy. Avocado Ripeness Matters: Use perfectly ripe avocados—they should yield to gentle pressure but not be mushy or brown inside. Underripe avocados won’t blend smoothly and will taste grassy. Overripe avocados can have off flavors. No Avocado Taste: The chocolate and cocoa powder completely mask the avocado flavor. Even avocado-haters won’t detect it. The avocado provides creaminess and healthy fats, nothing more. Blending is Critical: Blend longer than you think necessary to ensure zero lumps or chunks. A high-powered blender works best—food processors work but may leave tiny bits. Texture Evolution: The mousse firms up significantly as it chills. Fresh from the blender it’s more like pudding. After an hour in the fridge it’s proper mousse consistency. After 4+ hours it’s even firmer and more set. Storage Guidelines: Store covered in the refrigerator for up to 3 days. The mousse may darken slightly on the surface (oxidation) but is still perfectly safe to eat. Stir before serving or scrape off the top layer. Serving Temperature: Serve chilled for best texture. At room temperature it becomes softer and more pudding-like, which is also delicious but different.
