Ingredients
1¾ cups almond flour
¾ cup coconut sugar
⅓ cup coconut oil, melted
2 large eggs (pasture-raised preferred)
¼ cup pure maple syrup
¾ cup unsweetened cocoa powder
2 tsp (10ml) instant coffee
1 tsp (5ml) vanilla extract
½ tsp salt
½ tsp baking soda
½ cup dark chocolate chips

Step 1
Preheat oven to 325°F (163°C). Line 8×8 baking pan with parchment.
Step 2
Dissolve instant coffee in 1 tablespoon warm water.
Step 3
Whisk almond flour, cocoa powder, salt, and baking soda in large bowl.
Step 4
Mix melted coconut oil, maple syrup, coconut sugar, eggs, vanilla, and coffee mixture separately.
Step 5
Combine wet and dry ingredients until just mixed. Fold in chocolate chips.
Step 6
Pour into prepared pan and bake 28-32 minutes until toothpick comes out with few moist crumbs.
Step 7
Cool completely before cutting. Store covered up to 4 days.
