Olive oil is produced by grinding olives into an olive paste and extracting the oil using large millstones. The best olive oils are cold-pressed, meaning no heat or chemicals are used during extraction, preserving the oil’s delicate flavor compounds and nutritional value. Olive oil can be unrefined, extra virgin olive oil (EVOO), and refined. Unrefined EVOO retains its natural antioxidants and vitamins, which are typically lost during the refining process.
Extra virgin olive oil is high in oleocanthal, a natural polyphenol compound that has the same anti-inflammatory properties as ibuprofen. Polyphenols are packed with antioxidants that help protect your cells from oxidative stress. EVOO also contains vitamin E, which supports skin health and immune function, and vitamin K, essential for bone health and blood clotting.
The high monounsaturated fat content (about 73%) makes olive oil heart-healthy, helping to reduce bad cholesterol levels while maintaining good cholesterol. This Mediterranean staple has been linked to reduced risk of heart disease, stroke, and certain cancers.
