Avocado oil is made by extracting the oil from avocado pulp through a cold-pressing process that preserves the oil’s natural nutrients and flavor compounds. Unlike many other oils, avocado oil retains beneficial compounds like lutein, an antioxidant that supports eye health, and beta-sitosterol, which may help lower cholesterol levels. Unrefined avocado oil has a smoke point of 400°F, while a naturally refined one has a smoke point of 520°F.

This exceptionally high smoke point makes avocado oil ideal for high-heat cooking methods like searing, roasting, and grilling without breaking down into harmful compounds. The oil is rich in oleic acid, a heart-healthy monounsaturated fat that comprises about 70% of its fatty acid profile.
