Good To Know
Coconut Oil Benefits: Creates perfectly crispy texture while providing healthy medium-chain fatty acids – solid at room temperature but melts easily when heated. Nutritional Yeast Power: Adds cheesy, umami flavor without dairy while providing B-vitamins including B12 – essential for plant-based diets. Kernel Selection: Organic popping corn ensures no GMOs or pesticides while providing whole grain fiber and antioxidants. Temperature Control: Medium-high heat prevents burning while ensuring all kernels pop – too high burns oil, too low leaves unpopped kernels. Timing Technique: Listen for popping to slow to 2-3 seconds between pops to prevent burning – timing is more reliable than visual cues. Even Seasoning: Add seasonings immediately after popping while kernels are still warm and slightly oily for best adherence. Storage Strategy: Store completely cooled popcorn in airtight container up to 3 days – moisture is the enemy of crispness. Safety First: Always remove lid away from face to avoid steam burns – residual kernels may still pop after removing from heat.
steps
Heat Oil:
Heat coconut oil in large, heavy-bottomed pot with tight-fitting lid over medium-high heat. Heavy bottom prevents hot spots and burning.
Test:
Add 3-4 popcorn kernels as testers. When they pop vigorously, the oil is at perfect temperature for adding remaining kernels.
Add Kernels:
Remove test kernels and add remaining popping corn in single layer. Cover pot immediately and shake gently to distribute kernels evenly in oil.
Pop:
Shake pot occasionally while kernels pop. When popping slows to 2-3 seconds between pops, immediately remove from heat to prevent burning.
Rest:
Let sit 30 seconds with lid on to allow final kernels to pop and steam to settle. Remove lid away from your face to avoid steam burns.
Season:
In small bowl, mix nutritional yeast, salt, garlic powder, smoked paprika, onion powder, and pepper. Drizzle melted butter over warm popcorn if using.
Toss:
Sprinkle seasoning blend over popcorn and toss thoroughly with large spoon or clean hands to distribute flavors evenly on every kernel.
Serve:
Serve immediately while warm and crispy. Store any leftovers in airtight container up to 2 days – reheat briefly in 300F (150C) oven to restore crispness if needed.
