2½ cups cassava flour
¾ cup allulose (derived from sugar beets preferred)
½ cup grass-fed butter, softened
¼ cup coconut oil, softened
1 large egg (pasture-raised preferred)
2 tsp (10ml) vanilla extract
1 tsp (5ml) baking powder
½ tsp salt
Extra allulose (derived from sugar beets preferred) for rolling

Oat flour (use 2 cups), pure maple syrup for coconut sugar (reduce to ⅓ cup).

Cream butter, coconut oil, and allulose until light and fluffy.
Step 2
Beat in egg and vanilla until well combined.

Whisk cassava flour, baking powder, and salt in separate bowl.

Gradually mix dry ingredients into wet until dough forms.

Wrap dough and chill 2 hours.

Preheat oven to 375°F (191°C). Roll dough into balls, roll in allulose, and place on baking sheets.

Bake 8-10 minutes until edges are lightly golden. Cool on wire racks.
