1 lb cassava flour macaroni or chickpea pasta
4 tbsp (60ml) grass-fed butter
¼ cup cassava flour
3 cups (720ml) unsweetened almond milk
8 oz (224g) sharp cheddar cheese, shredded
4 oz (112g) gruyere cheese, shredded
2 oz (60ml) cream cheese, softened
1 tsp (5ml) Dijon mustard
½ tsp garlic powder
1 tsp (5ml) sea salt
½ tsp black pepper
¼ tsp paprika

Step 1
Cook pasta according to package directions until al dente. Drain.

In same pot, melt butter over medium heat.
Step 3
Whisk in cassava flour and cook 1 minute to remove raw flour taste.
Step 4
Gradually whisk in almond milk until smooth.
Step 5
Simmer until thickened, about 5 minutes.
Step 6
Remove from heat and whisk in cheeses, mustard, garlic powder, salt, and pepper.
Step 7
Add cooked pasta and stir until well coated.
Step 8
Sprinkle with paprika and serve immediately.
