Loaded Cauliflower
Loaded Cauliflower
[The Slightly Tipsy Remix]
Crispy-roasted, golden-charred, and piled high with all the loaded potato fixings—but it’s a whole cauliflower head instead. Greek yogurt, sharp cheddar, crispy bacon, and fresh chives turn this vegetable into a showstopper side dish that steals the spotlight. This is the baked potato that grew up and got interesting.
Ingredients
For the Cauliflower:
1 large head cauliflower (about 2 pounds/900g), leaves trimmed but core intact
3 tablespoons (45ml) avocado oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon sea salt
1/4 teaspoon black pepper
For the Toppings:
6 slices bacon (pasture-raised preferred), cooked crispy and chopped
1 cup (120g) shredded sharp cheddar cheese
1/2 cup (120g) plain Greek yogurt
1/4 cup (25g) chopped green onions
Fresh chives, chopped, for garnish
Steps
Prep:
Preheat oven to 425°F (220°C). Trim the leaves from the cauliflower but leave the core intact so the head stays together. Slice a small amount off the bottom to create a flat base so it sits upright. Place cauliflower in a baking dish or cast-iron skillet.
Season:
In a small bowl, whisk together avocado oil, garlic powder, smoked paprika, salt, and pepper. Brush the entire cauliflower head generously with the seasoned oil, getting into all the nooks and crannies. The oil helps create golden, crispy edges while the spices add depth.
Roast:
Cover the baking dish with foil and roast for 30 minutes. Remove foil and continue roasting for 15-20 minutes until the cauliflower is fork-tender and the edges are golden brown and slightly charred. The high heat creates caramelization that mimics the crispy skin of a baked potato.
Load It Up:
Remove cauliflower from oven and immediately top with shredded cheddar cheese and chopped bacon. Return to oven for 2-3 minutes just until cheese melts. Transfer to a serving platter.
Serve:
Dollop Greek yogurt over the top, then sprinkle with green onions and fresh chives. Slice into wedges like a cake and serve immediately while the cheese is still melty and the cauliflower is hot.
Make it Good For The Gut
Greek yogurt provides probiotics: Choose yogurt with live active cultures for billions of beneficial bacteria that support digestive health. Cauliflower delivers prebiotic fiber: Each serving provides fiber that feeds your microbiome and supports gut lining health. Add fermented toppings: Sprinkle with pickled jalapeños or top with a spoonful of sauerkraut for extra probiotic power.
Remix Options
Buffalo Loaded: Drizzle with hot sauce before the final roast and top with crumbled blue cheese instead of cheddar. Tex-Mex Style: Use pepper jack cheese, top with salsa, jalapeños, and cilantro instead of bacon and chives. Veggie Loaded: Skip the bacon and add roasted red peppers, sautéed mushrooms, and caramelized onions. Garlic Parmesan: Use Parmesan cheese instead of cheddar and add 4 minced garlic cloves to the oil before brushing. Pizza Cauliflower: Top with marinara sauce, mozzarella, and pepperoni slices for pizza-inspired flavor. Broccoli Cheddar: Use a head of broccoli instead of cauliflower for a different vegetable base. Dairy-Free: Replace Greek yogurt with cashew cream and use dairy-free cheese or skip cheese entirely and double the bacon.
Good To Know
Your Swaps Executed: This recipe swaps a baked potato for a whole roasted cauliflower head and sour cream for Greek yogurt—delivering all the loaded potato vibes with significantly fewer carbs and added protein. Whole Head Magic: Roasting the cauliflower whole creates a dramatic presentation and keeps it tender inside while developing crispy, caramelized edges outside. It’s also easier than roasting florets—no cutting, less mess. Core Keeps It Together: Leaving the core intact is crucial—it holds the cauliflower together so you can slice it into wedges like a cake. If you remove the core, it falls apart into florets. Foil Technique: Starting with foil traps steam that cooks the cauliflower through without drying it out. Removing the foil for the final roast allows the exterior to crisp and caramelize. Cheese Timing: Add cheese only in the last 2-3 minutes to prevent it from overcooking and becoming greasy or separating. You want melty perfection, not a burnt cheese crust. Serving as a Main: This is substantial enough to serve as a vegetarian main course for 2-3 people. Pair with a simple green salad and you have a complete meal. Make-Ahead Option: Roast the cauliflower up to 1 day ahead, refrigerate, then reheat at 375°F (190°C) for 15 minutes before adding toppings and finishing.
