Ingredients
Base Ingredients:
3 cups (720ml) high-quality sparkling water, chilled
1/2 cup (120ml) fresh ruby red grapefruit juice
1/4 cup (60ml) fresh lemon juice
2-3 tbsp (30-45ml) raw honey
1/4 tsp (1.5g) sea salt
Garnish & Enhancement:
Fresh grapefruit slices
Fresh mint sprigs
Ice cubes
Grapefruit zest (optional)
Steps
Juice:
Squeeze fresh grapefruit and lemon until you have 1/2 cup grapefruit juice and 1/4 cup lemon juice. Strain out any seeds but keep some pulp for texture.
Sweeten:
In small bowl, whisk together honey and sea salt until dissolved. Start with 2 tbsp honey and adjust sweetness to taste.
Combine:
In large pitcher, stir together grapefruit juice, lemon juice, and honey mixture until well blended and honey is completely dissolved.
Sparkle:
Slowly add chilled sparkling water to citrus mixture, stirring very gently to maintain carbonation and prevent excessive fizzing.
Taste:
Taste and adjust sweetness with additional honey if needed. The flavor should be bright, tart, and refreshing with balanced sweetness.
Serve:
Fill glasses with ice and pour sparkling grapefruit mixture over ice. Garnish with fresh grapefruit slices and mint sprigs.
Enjoy:
Serve immediately while maximally carbonated and cold. Stir gently before drinking if ingredients have separated slightly.

Remix Options
Citrus Variations: Use pink grapefruit for milder flavor, white grapefruit for more bitter edge, or blood orange for sweet complexity. Sweetener Alternatives: Try pure maple syrup for deeper flavor, coconut nectar for tropical notes, or omit sweetener for pure tart refreshment. Herbal Infusions: Add fresh rosemary, thyme, or basil for sophisticated botanical flavors that complement the citrus. Fruit Combinations: Mix with fresh lime juice, orange juice, or add muddled berries for complex fruit profiles. Sparkling Options: Use different mineral waters for varying mineral content and bubble intensity, or add plain water for milder carbonation. Concentrated Version: Make grapefruit syrup by simmering juice with honey, then mix with sparkling water for consistent flavor control.
Good To Know
Fresh Juice Essential: Use freshly squeezed grapefruit juice for best flavor and nutritional benefits – bottled juice lacks the bright, vibrant taste this drink needs. Grapefruit Selection: Choose heavy, firm grapefruits that give slightly when pressed – they’ll have the most juice and best flavor for optimal results. Balance is Key: Start with less honey and adjust to taste since grapefruit sweetness varies by variety and season – you can always add more sweetness. Carbonation Care: Add sparkling water last and stir gently to maintain maximum fizz and prevent the drink from going flat. Serving Temperature: Serve ice-cold for most refreshing experience – chill all ingredients beforehand for best results without diluting with too much ice. Storage Strategy: Make concentrate (juice, honey, salt mixture) ahead and store refrigerated up to 3 days, then add sparkling water just before serving. Italian Heritage: This homemade version captures the essence of the beloved Italian sparkling beverage while using only natural, wholesome ingredients.
