For Fish:
1½ lbs white fish fillets (cod or haddock)
1 cups (120g) cassava flour
½ cup almond flour
1 tsp (5ml) baking powder
1 tsp (5ml) sea salt
½ tsp black pepper
1 cups (240ml) cold sparkling water or light beer
Avocado oil for frying
For Chips:
2 lbs (0.9kg)s russet potatoes, cut into thick fries

Sea salt for seasoning

Heat oil to 375°F (191°C) in large, heavy pot.

Step 2

Cut potatoes into thick fries and soak in cold water 30 minutes.

Step 3

Pat fish dry and season with salt and pepper.

Step 4

Mix cassava flour, almond flour, baking powder, and salt for batter.

Step 5

Whisk in cold sparkling water until smooth.

Step 6

Drain and dry potatoes, fry in batches 3-4 minutes. Set aside.

Step 7

Dip fish in batter and fry 4-5 minutes until golden and crispy.

Step 8

Return fries to oil for final 2-3 minutes until golden.
