Total Time
10 min (5 min prep)
Ingredients
1 cup (240ml) San Marzano marinara sauce
1 cup (225g) cottage cheese (grass-fed preferred)
1 cup (240ml) chicken bone broth
1/2 tsp (3g) Diamond Crystal kosher salt, or to taste
1/4 tsp (1g) freshly ground black pepper, or to taste
1/4 tsp (1g) garlic powder
1/4 tsp (1g) dried basil
Steps
Blend:
Add San Marzano marinara sauce, cottage cheese, and chicken bone broth to high-powered blender. Blend on high speed 30-45 seconds until completely smooth and creamy with no visible cottage cheese curds remaining.
Heat:
Pour blended mixture into medium pot or saucepan. Heat over medium heat, stirring occasionally, until soup reaches gentle simmer and is heated through, about 3-5 minutes.
Season:
Stir in Diamond Crystal kosher salt, freshly ground black pepper, garlic powder, and dried basil. Taste and adjust seasonings as needed for perfect flavor balance.
Serve:
Ladle hot soup into bowls and serve immediately with grilled cheese, spinach wraps, or crusty bread for dipping. Garnish with fresh basil, olive oil drizzle, or grass-fed parmesan if desired.
Make it Good For The Gut (Optional)
Use probiotic cottage cheese with live active cultures for gut-friendly bacteria that survive the gentle heating process. Replace regular bone broth with gut-healing bone broth rich in collagen, gelatin, and amino acids. Add 1 tsp apple cider vinegar after blending for probiotic benefits and enhanced flavor. Stir in 1 tbsp grass-fed butter or ghee at the end for butyric acid that supports intestinal health. Top with fresh basil leaves or microgreens for additional enzymes and nutrients. Add 1/2 tsp turmeric powder for anti-inflammatory properties. Garnish with sauerkraut juice drizzle or fermented hot sauce for extra probiotics.
Remix Options
Vegan Version: Replace cottage cheese with 1 cup silken tofu or cashew cream, and use vegetable broth instead of chicken bone broth. Extra Protein Boost: Add 1 scoop unflavored collagen peptides or bone broth protein powder when blending. Creamy Roasted Red Pepper: Add 1/2 cup roasted red peppers to blender for smoky, sweet flavor. Italian Herb: Increase dried basil to 1 tsp and add 1/2 tsp dried oregano and pinch of red pepper flakes. Spicy Kick: Add 1/4 tsp cayenne pepper or 1 tbsp calabrian chili paste when blending. Fresh Tomato Version: Replace marinara with 2 cups roasted cherry tomatoes plus 2 tbsp tomato paste. Dairy-Free: Use coconut cream instead of cottage cheese for rich, dairy-free version. Thicker Consistency: Add 1/4 cup raw cashews to blender or reduce by simmering longer. Garnish Ideas: Top with fresh basil, drizzle of extra virgin olive oil, grass-fed parmesan shavings, or cracked black pepper.
Good To Know
Cottage Cheese Magic: Blending cottage cheese until completely smooth creates incredible creaminess with added protein – the curds disappear entirely, leaving silky texture without heavy cream. San Marzano Quality: These Italian tomatoes are less acidic and naturally sweeter than regular marinara, creating balanced flavor that doesn’t need added sugar. Look for DOP certification for authentic San Marzano tomatoes. Bone Broth Benefits: Chicken bone broth adds depth, collagen, and gut-healing properties. Use homemade or quality store-bought with minimal ingredients. Blending Tips: Blend on high speed 30-45 seconds until completely smooth with no visible cottage cheese curds. A high-powered blender works best. Gentle Heating: Simmer gently rather than boiling to preserve probiotic benefits if using probiotic cottage cheese. Too much heat kills beneficial bacteria. Storage Guidelines: Store in airtight container in refrigerator up to 4 days. Reheat gently on stovetop, stirring frequently. Freezing Instructions: Cool completely, freeze in freezer-safe containers up to 3 months. Thaw overnight in refrigerator, reheat gently and whisk to restore smooth texture. Make-Ahead Tips: Blend ingredients up to 2 days ahead and store in refrigerator. Heat when ready to serve for fastest meal prep. Serving Suggestions: Pair with grilled cheese, crusty bread, spinach wraps, or simple side salad. Perfect for dipping.
