Total Time
4 hr 10 min (10 min prep)
Ingredients
Base:
1/2 cup (80g) chia seeds
2 cups (480ml) full-fat coconut milk
1/4 cup (60ml) pure maple syrup
1 tsp (5ml) vanilla extract
1/4 tsp (1.5g) Diamond Crystal kosher salt
Optional Toppings:
1/2 cup (75g) fresh berries (summer preferred)
2 tbsp (15g) toasted coconut flakes
2 tbsp (15g) chopped almonds or macadamia nuts
1 tbsp (15ml) raw honey for drizzling
1/4 cup (40g) seasonal fruit, diced
1 tsp (2g) cinnamon for sprinkling
Steps
Combine:
In large mixing bowl or jar, whisk together coconut milk, maple syrup, vanilla extract, and salt until well blended and smooth.
Add:
Slowly pour chia seeds into liquid mixture while whisking continuously to prevent clumping. Whisk vigorously for 2-3 minutes until evenly distributed.
Rest:
Let mixture stand 15 minutes at room temperature, then whisk again vigorously. Repeat this process 2-3 times over first hour to ensure proper gel formation.
Chill:
Cover and refrigerate minimum 4 hours or overnight until pudding reaches thick, creamy consistency. Pudding will continue to thicken over time.
Serve:
Stir pudding before serving and adjust consistency with additional liquid if needed. Divide into bowls and top with desired toppings before enjoying.
Make it Good For The Gut (Optional)
Replace 1/4 cup coconut milk with plain kefir for probiotics and tanginess. Add 1 tbsp fermented vanilla extract for enhanced flavor and beneficial bacteria. Include 1 tsp prebiotic inulin powder with chia seeds to feed beneficial gut bacteria. Stir in 1 tbsp apple cider vinegar with the mother for digestive enzymes. Top with fermented berries or aged cheese crumbles for additional probiotic benefits.
Remix Options
Milk Alternatives: Use 2 cups (480ml) unsweetened almond milk for lighter version, cashew milk for creaminess, or milk (grass-fed preferred) for traditional dairy option. Sweetener Swaps: Replace maple syrup with 3 tbsp (60g) raw honey, 1/4 cup (50g) brown coconut sugar dissolved in 2 tbsp water, or 2 tbsp allulose for lower glycemic option. Flavor Variations: Add 2 tbsp (15g) cocoa powder for chocolate version, 1 tsp matcha powder for green tea, or 1/2 tsp almond extract with sliced almonds. Protein Boosters: Blend in 1 scoop vanilla collagen peptides, 2 tbsp almond butter, or 1/4 cup (30g) hemp hearts for extra protein and omega-3s. Spice Blends: Add 1/2 tsp ground cardamom and 1/4 tsp rose water for Middle Eastern flair, or 1 tsp chai spice blend for warming flavors. Texture Variations: For smoother pudding, blend mixture before chilling; for chunky texture, add chopped nuts or seeds after first hour of chilling. Layered Parfait: Alternate chia pudding with coconut yogurt and fresh fruit in glasses for elegant presentation.
Good To Know
Chia Seed Benefits: These tiny seeds provide complete protein with all 9 essential amino acids, plus 11 grams fiber and 5 grams omega-3s per ounce – they expand 10-12 times their weight when soaked. Ingredient Selection Tips: Choose organic chia seeds that are uniform in color (black or white) and free from debris – store in airtight container in cool, dry place for up to 4 years. Texture Secrets: Proper hydration requires 1:6 ratio of chia to liquid minimum – stir vigorously every 15 minutes for first hour to prevent clumping and ensure even gel formation. Make-Ahead Instructions: Prepare up to 5 days ahead for best flavor development – pudding continues to thicken over time, add liquid as needed before serving. Storage Guidelines: Keep refrigerated in covered containers up to 1 week, or portion into mason jars for grab-and-go breakfasts – always stir before serving. Reheating Instructions: Serve cold or at room temperature – do not heat as this breaks down the gel structure and creates unpleasant texture. Freezing Tips: Freeze individual portions up to 3 months in freezer-safe containers – thaw overnight in refrigerator and stir well, may need additional liquid after thawing. Above 3000ft: Higher altitude may require additional 2-4 tbsp liquid due to lower humidity affecting chia expansion rates. Troubleshooting: If too thick, whisk in liquid 1 tbsp at a time; if too thin after 4+ hours, add 1-2 tbsp more chia seeds and wait 2 hours; if clumpy, blend briefly with immersion blender.
