Sesame seeds are made up of as much as 60% oil.  Raw seeds are pressed to extract a virgin, light sesame oil.  Dark sesame oil is made in the same way as light sesame oil, with the only difference being that the seeds are toasted beforehand.  Sesame oil can be refined, but it’s generally not, to preserve its nutty, sesame flavor.

Sesame oil is a great source of both monounsaturated and polyunsaturated fats, which reduce the risk of heart disease and lowers blood pressure.

Best Uses

Light sesame oil is best used in low-heat cooking methods. Dark (toasted) sesame oil can be used for low- or medium-heat cooking (not deep-frying). It can be added at the end or after cooking.  Both types lose some of their flavor if cooked for too long or over high heat.
