Pistachio flour is made from grinding blanched pistachios. 

Pistachio flour contains omega-3 fatty acids.  Six percent of the recommended daily amount of omega-3 fats comes from just a 1 oz serving.  Pistachio flour has 6 grams of protein per serving.  Protein is composed of amino acids.  Essential amino acids cannot be made by the body.  When protein is broken down in the body, it helps to fuel muscle mass, which in-turn helps your metabolism.
