Makes

Serves 4

Total Time

24 hr 10 min (10 min prep + 24 hr freeze)

Ingredients

Sorbet Base:
2 cups (300g) mixed frozen berries (strawberries, blueberries, raspberries)
1/2 cup (120ml) pure maple syrup
1/4 cup (60ml) fresh lemon juice
1/4 cup (60ml) water
Pinch of sea salt

Steps

Blend:

Combine frozen mixed berries, maple syrup, fresh lemon juice, water, and sea salt in food processor or high-speed blender for smooth processing.

Process:

Blend until completely smooth and vibrant in color, about 2-3 minutes, stopping to scrape down sides as needed for even blending and consistency.

Fill:

Pour mixture into Ninja Creami pint container, leaving 1/4 inch space at top for expansion. Secure lid tightly and ensure container is level.

Freeze:

Freeze for minimum 24 hours until completely solid throughout. The mixture must be frozen solid for Ninja Creami to process properly into smooth sorbet.

Spin:

Remove from freezer and process in Ninja Creami using “Sorbet” setting. If mixture appears crumbly or icy, use “Re-spin” function for smoother texture.

Serve:

Serve immediately for soft texture perfect for easy scooping, or transfer back to freezer for 2-4 hours for firmer consistency ideal for formal presentation.

Store:

Store covered in freezer up to 2 weeks for best quality and flavor. Let soften 5-10 minutes at room temperature before scooping if frozen solid.

Make it Good For The Gut (Optional)

Add 2 tablespoons plain kefir for beneficial probiotics and slightly creamier texture that enhances the berry flavors. Include 1 tablespoon raw honey instead of some maple syrup for prebiotic benefits and natural enzymes. Add 1 teaspoon fresh ginger juice for digestive support and subtle warming spice that complements the fruit beautifully.

Remix Options

Sweetener Alternatives: Raw honey for maple syrup for floral notes, agave nectar for neutral sweetness, or coconut sugar for caramel undertones. Citrus Variations: Lime juice for tropical twist, orange juice for sweeter profile, or grapefruit juice for tart complexity. Berry Combinations: All strawberry for classic flavor, blueberry-lemon for antioxidant boost, or blackberry-mint for sophisticated taste. Texture Add-ins: Fresh mint leaves for cooling effect, basil for herbal complexity, or vanilla extract for aromatic depth. Alcohol Versions: Add 2 tablespoons berry liqueur, champagne, or prosecco for adult frozen cocktails. Protein Boost: Include collagen peptides or protein powder for post-workout treat with added nutrition. Without Ninja Creami: Use ice cream maker according to manufacturer instructions, or freeze in shallow pan stirring every 30 minutes for 3 hours. Layered Presentation: Make different berry flavors separately and layer in serving glasses for beautiful visual effect.

Good To Know

Berry Selection: Use high-quality frozen berries for consistent results and concentrated flavor – frozen fruit actually works better than fresh for sorbets. Maple Syrup Magic: Pure maple syrup enhances natural berry sweetness while preventing ice crystals and providing smooth texture. Lemon Balance: Fresh lemon juice brightens all flavors and prevents oxidation while adding essential acidity for perfect taste balance. Salt Enhancement: A pinch of sea salt intensifies fruit flavors and makes sweetness more pronounced without adding sodium taste. Freezing Science: Ninja Creami requires 24-hour solid freeze for proper processing – insufficient freezing creates poor texture. Texture Control: For softer serve, let sit 5-10 minutes before scooping; for firmer texture, freeze additional 2-4 hours after processing. Color Preservation: Lemon juice helps maintain vibrant berry colors and prevents browning during storage. Storage Solutions: Store covered in freezer up to 2 weeks; let soften slightly before re-scooping if frozen solid. Serving Temperature: Best served at 5-10°F (-15 to -12°C) for optimal scooping consistency and flavor release.
